Winnsboro CTE Meat Lab

Winnsboro High School opened its new Meat Lab, successfully harvesting its first cow. This marks the start of the school’s agricultural education program, with students gaining hands-on experience in processing, packaging, and returning meat to customers. The WISD Meat Lab is certified as a Custom Exempt Processing facility by the Texas Department of Health and Human Services, allowing it to process animals for individuals. Enrollment has doubled, with instructor Rance Smith highlighting technical food production, customer service, and business skills development, opening career opportunities. WHS plans to process various animals, including cattle, lambs, goats, and deer, providing students with vital insights into food origins, safety, and processing for industry careers.

CTE Programs

Beginning in the seventh-grade students can participate in four CTE courses: Principles of Arts, Audio/Visual Technology and Communications; Professional Communications, Cyber Citizenship; and General Employability Skills. CTE programs provide academic, technical, and employability skills for postsecondary training, higher education, and career entry, fostering applied learning, reasoning, problem-solving, and positive work attitudes.
